Cedar Planked Salmon

Cooking salmon on cedar planks creates a moist and tender filet. There’s something magical about cedar planks that removes all the fishy taste and adds a special taste to the salmon.

Untreated cedar planks (most meat departments carry them)
Salmon filets, skinned and rinsed (about 1 ½ pounds)
Salt and pepper to taste
Lemon pepper to taste
Garlic to taste
Olive oil

Soak cedar planks in water with added salt for at least 2 hours. Season salmon with salt, pepper, lemon pepper and garlic to taste. Set grill for indirect cooking. Place cedar planks on hot grill for 6 minutes, turning once. Remove planks from grill and coat planks with olive oil. Place salmon filet on cedar planks  Place cedar planks in center of grill, not directly over heat. Keep grill covered during cooking and cook salmon for approximately 25 minutes for grill temperature of 350 degrees. Since indirect cooking, grill temperatures may vary , adjust cooking time accordingly. Salmon should reach an internal temperature of 135 degrees and flake easily with a fork.
