

Beer Brats
Many BBQ Bratwurst recipes call for you to par cook them in water before you put them on the grill because brats tend to burn easy with flare ups and usually take about 30 minutes on a hot BBQ with direct heat. Instead of par boiling my brats I like to have a bowl of hot beer to dip them in as I’m cooking them. Heat your beer to about 160 and pour the hot beer into a ceramic bowl (12oz of beer per 3 Brats). Place your Brats on a medium hot grill for about 3 minutes on each side or until lightly browned. Remove Brats from grill and thoroughly and quickly dip the Brats into the beer and place them back on the grill. Repeat the dipping process every 3 to 5 minutes or when a flare up occurs and alternate sides.Grill until thoroughly cooked.
Reminders: immediately remove Brats during flare-ups to beer bath or a cooler part of the grill until flare up resides. Never ever boil Brats, it will break the casings. Don’t buy already cooked Bratwurst, use only freshly made. Handle Brats with care so you don’t puncture the casings.
Condiments: Brat buns (not hot dog buns), grilled peppers & onions, brown mustard, Sierra Nevada’s mustards or Hack Daniels No. 7 mustard.
Side dishes: Sour kraut, German potato salad.
